HAPPY HALLOWEEN

Here's something fun and delicious to make with your pumpkin instead of carving it!

MEAL IN A PUMPKIN

1 6 to 8 inch pumpkin
1 onion minced
1 lb ground beef
1 lb sausage
1 large can stewed tomatoes (not drained)
1 can sliced water chestnuts
1 tsp. italian seasoning
3 cups cooked rice
1 cup grated monterey jack cheese
1 cup grated cheddar cheese

Cook and brown meat; drain fat and add onion, stewed tomatoes, water chestnuts and seasoning. Simmer for 10 minutes. Clean out insides of pumpkin, only cut off top. Put pumpkin in large baking dish. Layer the meat mixture, rice and cheeses, about 3 layers each. Put top back on and cook 1 hour at 350 or until pumpkin is tender.

I think I have actually had that or something similar to it at a potluck before. I am totally going to (try) to make it! I always feel so wasteful throwing a whole pumpkin away after Halloween. Although Jared has a lot of fun finding a high place he can throw it off and smash it. :)
