We had a wonderful time in San Diego last weekend. The weather was so nice, sunny and warm. We were blessed to be able to hear Rachel speak in Sacrament after returning from a 18 month mission in New Hampshire and to be their for Emma's baby blessing. Lots of fun, food and games with plenty of laughter! Thanks to my brother Joseph and sister-in-law Marlyce for a wonderful time. Thanks to my daughter Mandy for joining us and for fixing my broken tooth!

BABIES AND TEXTURES

We were blessed and lucky to have Audrey here for a visit last week. She is now walking and developing quite a little personality! Since her 1st birthday is the end of this month we had a little party for her. I made her a cake and used a light spongy sunshine cake with a light, fluffy whipped cream frosting instead of the heavy, sugary, buttercream frosting. I figured she didn't need all that sugar. Well as you can see by this picture she did not like the frosting at all! Just having it on her fingers freaked her out. I think it might have been the texture or something, as she hadn't even tasted it yet and she started crying. It's funny how we develop our taste of things sometimes by their textures. Her mom Marissa didn't like certain things when she was a little one too. She would not eat anything with citrus or any kind of beans. To this day I don't think she is crazy about any one of those things. Her uncle Brian would eat just about anything but couldn't stand to have any kind of food on his fingers. Her auntie Mandy absolutely detested rice(again I think that was a texture thing). Its always fun to watch little ones try new things!! I hope this means Audrey has a taste for healthy things and not sweets as much!

SUNSHINE CAKE

This is a wonderful light cake and is fairly easy to make. This recipe comes from a relative of Gary's. Her name is June, she is probably close to 90 years old. She says this recipe is her sons favorite. Whenever he would come home for a visit, she would always make this for him. I tried it for the first time the other day and loved it!! It is similiar to an angel food cake but has a little more to it.

SUNSHINE CAKE

6 egg yolks
1/2 cup sugar
1 cup sifted cake flour
2 T cold water
1/2 teaspoon each of vanilla, lemon and almond extracts
8 egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup sugar

Beat egg yolks until thickened then beat in 1/2 cup of sugar, cake flour, water and extracts. Set aside. Beat egg whites gradually add cream of tartar and 1 cup of sugar and beat until stiff peaks are formed. Gently fold egg yolk mixture into egg white mixture. Pour into ungreased angel food tube pan. Bake at 325 for approximately 35-40 minutes. Invert pan until cake is cooled. Run a sharp knife around edge to remove from pan. Frost as desired.

It's all about SERVICE

I work with the primary activity girls (ages 8 thru just b4 they turn 12). Nov/Dec 2008 we worked on a service project and made two quilts. We made a quilt for a girl and the one pictured here is the one for a boy. The quilts were donated to the local shelter for families. The girls worked hard and learned skills and were excited to do service for others in need. In total we had about 15 girls working on this project. They drew the pictures on the squares with fabric pens and they tied the quilt together. Lots of fun!!!

BE PREPARED!!

Recently Gary's daughter Donna (who lives in Kentucky in a rural area) has been left without power for we think about a week. We had to overnight ship her lanterns and batteries(expensive to ship this way) Most of the stores are not open and the ones that are have very little. Are you prepared in the event of an emergency?
Check this out. Someone in my ward sent me this link to this blog. It's all about being prepared in an emergency and food storage, etc. Very good ideas. Everyone should read this.
